Long story short, I haven’t done any of these things. But I’m trying to remind myself of the fun things we have done. We celebrated Thanksgiving with crab from Pike’s Place Market. This last weekend we went to the Christmas Lighting Festival in Leavenworth with our friends who just adore Hanky Pank.
One thing I have done this season is make sugar cookies. No fun shapes. No icing. No sprinkles. Just plain sugar cookies.
It made me realize Hanky Pank needed his own plain “cookie”. Something simple and delicious but without added sugar. These Banana & Cinnamon Biscuits seemed to do the trick. Great for teething or just a sweet treat. And he even got the fun shapes!
Notes
Store for 3 days in refrigerator or 3 months in freezer.
Ingredients
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1 mashed banana
- 2 tablespoon coconut oil
- 1/2 teaspoon vanilla
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, combine flour, baking powder, and cinnamon. Add mashed banana, coconut oil, and vanilla. Stir until just combined.
- Sprinkle surface with flour and roll out dough until approximately 1/4-inch thick. Cut into desired shape and place on lightly greased baking sheet.
- Bake until edges begin to brown, about 15 minutes.

Any flour? Would almond flour work?

Hi Fanny! With Hanky Pank, I introduced finger foods around 7-8 months. By that time, he was able to “chew” with his gums (no teeth), had a good pincher grasp, and could sit up unassisted. If you try the biscuits and your baby is not quite there, they freeze well so you could always try again in a another week or so. Hope that helps!

This looks so good! Do they work with gf flour?
Hi Suzanne! I have not tried them with gluten-free flour but I’m thinking they just might. From my experience, gluten-free flour doesn’t hold shape as well as all-purpose, which can be a bit of a problem when you need to roll out dough. BUT the stickiness from the banana might keep them together. I might have to give it a try just to see!
