Chicken, Quinoa & Apple Bites
These Chicken, Quinoa & Apple Bites are a delicious combination of protein and fruit that make a great meal or snack for baby.
Making baby food has been a journey from smooth purees to table foods. While the changes have been gradual for Hanky Pank, it’s pretty incredible to think he went from an “all-liquid” diet (as my mother-in-law liked to say) to finger foods in just a few months.
When making finger foods, my approach was to either take my favorites and substitute certain ingredients where needed, such as these Apple Cinnamon Pancakes, or take Hanky Pank’s favorite purees and figure out how to make them into finger foods, like my Sweet Potato & Broccoli Fritters.
One of my go-to recipes for purees was this Chicken, Quinoa & Pear Puree. Its ingredients are simple and it’s easy to make. So how could I make it into a finger food?
Luckily, the answer was simple! Just put the puree in a mini muffin tin and bake them for 20 minutes. For a little variety I replaced the pear and thyme with apple and rosemary. I was on cloud nine to find a puree that could so easily be made into a finger food. Sometimes things do just fall into place!

Store for 3 days in refrigerator or 3 months in freezer
Ideal Age is 6+ Months
Ingredients
- 3 cups chicken broth
- 6 chicken tenderloins
- 1 cup quinoa
- 1 apple, cored and sliced
- 1 teaspoon rosemary, optional
Instructions
- Preheat oven to 350 degrees.
- In a large pan, bring ingredients to a boil. Reduce heat to a simmer and cover.
- Cook until quinoa is tender and chicken is cooked through, about 10 to 15 minutes. Remove from heat and allow to cool slightly.
- Transfer to food processor using a slotted spoon and puree. If needed, add 2 tablespoons of remaining broth at a time to reach desired consistency.
- Spoon mixture into a lightly greased muffin tin. Bake until set, about 20 minutes.
