This Banana & Coconut Milk Oatmeal combines wholesome oatmeal, sweet bananas, and creamy coconut milk to make a simply delicious breakfast!
After making Banana & Coconut Pancakes, I’m obsessed with combination of bananas and coconut milk. The sweetness of bananas with the creaminess of coconut milk is heavenly.
I’m also obsessed with oatmeal. We’ve gotten to the point where getting a 7 pound bag of steel-cut oats makes sense. Oatmeal is easy for me to make (and freeze) and Hanky Pank loves it.
While Apple & Cinnamon Oatmeal is definitely his favorite, variety is the spice of life and he was more than happy with this simply delicious oatmeal!
Notes
Store in 3 days in refrigerator or 3 months in freezer.
Ingredients
- 1 cup steel-cut oatmeal
- 1 cup banana, mashed
- 1/4 cup coconut milk
- 1/2 teaspoon vanilla, optional
Instructions
- Bring 3 cups of water to a boil in a medium pot.
- Add oatmeal and vanilla. Reduce heat and simmer until tender, about 10 to 15 minutes.
- Remove oatmeal from heat. Stir in banana and coconut milk.
Is this canned coconut milk or refrigerated?
Hi Crystal! I use canned full-fat coconut milk (not coconut water or lite coconut milk). Let me know how they turn out!
