These Date, Peanut Butter & Cocoa Oat Bars combine wholesome rolled oats with a cup of delicious dates, a scoop of peanut butter and spoonful of cocoa powder for an on-the-go snack without refined sugar.
Hanky Pank is a full blown toddler. While some days start with morning cuddles, it’s only a matter of minutes before he’s on the move for the day.
And now that we’re on-the-go, I’ve been busy making on-the-go snacks. These Oat Bars have been perfect. They’re easy to make and combine wholesome rolled oats with a cup of delicious dates, a scoop of peanut butter and a spoonful of cocoa powder. Yum!
Now let’s talk about Dates. They’re delicious, probably because they’re high in sugar. So while this recipe does not include refined sugar, it’s by no means sugar-free. I’m less concerned about sugar from fruit, but still consider these Oat Bars to be a snack.

Ingredients
- 1 cup dates, pitted
- 2 cups rolled oats
- 1/4 cup peanut butter
- 1 tablespoon cocoa powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
Date Paste
- Bring 3/4 cup to a boil in a medium saucepan.
- Add dates and remove from heat. Allow dates to soak until plump and soft, about 20 minutes.
- Transfer to blender or food processor and puree until smooth. Set aside.
Bar
- Preheat oven to 350 degrees. Line 8-inch square baking dish with parchment paper.
- In a medium bowl, combine date paste, oats, peanut butter, cocoa powder, vanilla, and salt.
- Press firmly onto bottom of baking dish.
- Bake for 15 minutes.
Thank you for this simple, tasty recipe. I find it easier to blend the dates in the pan with a stick blender, before mixing in the other ingredients in the same pan. Half a cup of crushed walnuts or pecans add a little crunch. Ginger also goes well; either stem (if you don’t mind the suger) or powdered.

How much peanut butter do you use? I don’t see peanut butter in the list of ingredients, but I see peanut butter listed in the directions. Thank you
