Turkey, Lentil & Zucchini Puree Baby Food
I tend to get a little ahead of myself when it comes to making baby puree. Every other weekend I get home and realize I went a little overboard at the grocery store. Even when I already have my recipes picked out and grocery list in hand, sometimes I just can’t help picking up a few extra things. Which is how I ended up with a pound of lentils in my cupboard for a few weeks (months).
To be fair, lentils are great. They’re high in protein and fiber and a good source of folate and iron. In addition, they’re relatively easy to prepare and economical. All positives. A perfect addition to Hanky Pank’s diet.
Unfortunately, I didn’t find them particularly inspiring. Week after week, I’d see them in the cupboard and feel a little guilty for not using them. I started to wonder if I ever would or if they’d end up in the pantry next to the oyster knife and turkey baster (which will come totally in handy some day).
I was quickly losing hope for my lentils when it finally came to me. I’d gotten ground turkey and zucchinis to make into a baby puree but felt it was just missing something… Lentils! So I used half a pound in this recipe and the other half to make Lentil Baby Puree. Now wish me luck with the sack of barley I just bought!
