Yogurt Covered Fruit
Yogurt Covered Fruit is a healthy snack without added sugar! Made with greek yogurt, rich coconut cream, a touch of vanilla, and your favorite fruit!
Lately we’ve been eating a lot of greek yogurt. Like, buy-it-at-Costco a lot. Each night Hanky Pank “helps” make a smoothie for us to share. While we’ve certainly had a few accidents along the way, like the time he dropped the yogurt and it splattered pretty much everywhere, I absolutely love having my little in the kitchen with me.
Similar to smoothies, Hanky Pank loves Yogurt Melts. Both combine yogurt with fruit so I figured he’d also like Yogurt Covered Fruit. I find plain greek yogurt to be a bit too tangy so I added rich coconut cream with a touch of vanilla to sweeten it a little bit without sugar.
For the coconut cream, start with a can of full-fat coconut milk (not coconut water or lite coconut milk). The thick layer at the top of the can is the coconut cream, while the remaining liquid is coconut water. Spoon out the coconut cream for this recipe, and save the coconut water for another recipe, such as smoothies.
Then combine the yogurt mixture and fruit, spoon onto a baking sheet with parchment paper, and freeze. Alternatively, spread the yogurt mixture onto the baking sheet, top with fruit, and freeze to make Yogurt Bark.
