Parsnip & Cherry Applesauce
This Parsnip & Cherry Applesauce combines sweet apples and cherries with nutrient-dense parsnips for a perfect addition to lunch or snack time.
Hanky Pank is obsessed with apples. We keep little snack apples in bottom drawer of our fridge and he helps himself to one every day (but only eats half so we end up slicing up the other half for later). He’s also constantly asking for applesauce and apple juice (which is mostly water with a splash of apple juice).
It got me thinking that maybe I could use apples to incorporate some more vegetables into Hanky Pank’s diet. The most obvious answer was to make an applesauce with vegetables. Parsnips seemed like an easy choice given their sweet but earthy flavor would go well with apples. Then I tossed in some cherries because Valentine’s day is coming up and I wanted some more pink in my life. See, it’s not all about Hanky Pank!

When making this Applesauce for Hanky Pank, I skipped the added sugar. For a sweeter applesauce, use sweeter apples, such as Fuji, Gala, Golden Delicious, Honeycrisp, Pink Lady, and Red Delicious apples. I also skipped peeling the apples and parsnip to keep more nutrients in the applesauce.
For a chuckier applesauce, it just takes a few seconds in the blender or food processor. For a smoother applesauce, it takes a little more time but not much, which is perfect for babies or to put in reusable pouches as an on-the-go snack for toddlers.

Parsnip & Cherry Applesauce
Notes
Store for 3 days in refrigerator or 3 months in freezer.
Ideal Age is 6+ Months.
Ingredients
- 3 apples, cored and chopped
- 1 medium parsnip, chopped
- 1/2 cup cherries
Instructions
- Bring 1 cup of water to a boil in a medium pot.
- Add apples and parsnip. Reduce heat and simmer until tender, about 25 minutes.
- Transfer to food processor or blender using a slotted spoon. Add cherries.
- Blend to reach desired consistency. If needed, add cooking water to reach desired consistency.
