Date, Coconut & Cocoa Oat Bars
These Date, Coconut & Cocoa Oat Bars combine rolled oats, dates, shredded coconut, and cocoa powder into an easy snack without added refined sugar.
These Date, Coconut & Cocoa Oat Bars are a hit with my whole little family. Now that Hanky Pank is on the move, he loves snacks to eat on his own because, “I can feed myself Mom!” (he can’t talk yet but that’s the general vibe I’m getting). And my husband likes them because they remind him of an Almond Joy.
I’m happy to have found a healthy snack that is easy to make and doesn’t leave crumbs everywhere. These Oat Bars combine wholesome rolled oats with a scoop of shredded coconut and a spoonful of cocoa powder, and are sweetened with dates instead of refined sugar. Win!
Another great thing about these Oat Bars is they actually freeze well. Once I’ve made a batch, I’ll divide them into a few plastic bags, throw them in the freezer, and then pull them out when we’re starting to run low on snacks. Easy peasy!

Date, Peanut Butter & Cocoa Oat Bars
Ingredients
- 1 cup dates, pitted
- 2 cups rolled oats
- 1/2 cup shredded coconut
- 1 tablespoon cocoa powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
Date Paste
- Bring 3/4 cup to a boil in a medium saucepan.
- Add dates and remove from heat. Allow dates to soak until plump and soft, about 20 minutes.
- Transfer to blender or food processor and puree until smooth. Set aside.
Bar
- Preheat oven to 350 degrees. Line 8-inch square baking dish with parchment paper.
- In a medium bowl, combine date paste, oats, shredded coconut, cocoa powder, vanilla, and salt.
- Press firmly onto bottom of baking dish.
- Bake for 15 minutes.

Is there peanut butter in this recipe? It’s not in the list of ingredients but a step mentions adding it.
