Soft Granola Bars
These Granola Bars make wholesome granola into soft and chewy bars for toddlers. Perfect for snack time and a great way to use leftover granola.
My husband is not a shopper but he loves Costco. I found this a little odd when we first met… What could a single guy need to buy in bulk? I even wondered if we really needed to shop there when it was just the two of us. But now that we have Hanky Pank, Costco is firmly established as part of our grocery routine.
3 cartons of milk? Sure.
7 pound bag of oatmeal? Makes sense.
12 apples? Yes please!
They’re on the list and staples we know we’ll use. But every now and then we still make an impulse buy, which is how we ended up with two huge bags of granola. Needless to say, I’ve been looking for new ways to use granola.

These bars make wholesome granola into soft and chewy bars Hanky Pank can enjoy. The granola I use already has raisins and sliced almonds, but basic granola would also work just fine. When making these bars, I start by breaking down any clumps into smaller pieces. Then I just combine all the ingredients, spread the mixture into a loaf pan, and bake.

* Date paste can be substituted with sugar.
Ingredients
- 1 cup granola
- 2/3 cup flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg
- 1/3 cup date paste *
- 1/4 cup butter, melted
- 1/2 teaspoon vanilla
Instructions
- Preheat oven to 350 degrees. Lightly grease loaf pan.
- In a medium bowl, combine granola, flour, baking soda, and salt. Set aside.
- Add egg, date paste, butter, and vanilla. Mix until combined.
- Pour mixture into loaf pan.
- Bake for 20 minutes, until toothpick inserted into center comes out clean.
