Sweet Potato Muffins are made with yummy sweet potatoes and sweetened with all-natural date paste.
Last week I picked up a few sweet potatoes with no particular recipe in mind. I just kind of missed them. Hanky Pank loved Sweet Potato Puree when he started solids to Roasted Sweet Potatoes when he was ready for finger foods. But lately they seemed to be missing from our kitchen. Not ok!
After a few days it came to me… Sweet Potato Muffins. Hanky Pank loves these muffins as a snack on-the-go or as a side at lunch or dinner. And I couldn’t be happier to have sweet potatoes back in the mix, especially when they’re sweetened with all-natural Date Paste.

Recipe:
Ingredients
- 1 3/4 cup flour
- 2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup sweet potato puree
- 3/4 cup milk
- 1 egg
- 1/4 cup date paste
- 1/4 cup butter, melted
Instructions
- Preheat oven to 400 degrees. Lightly grease muffin pan.
- In a large bowl, stir flour, baking soda, and salt. Set aside.
- In a medium bowl, combine sweet potato puree, milk, egg, date paste and butter.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Fill muffin pans two-thirds full.
- Bake for 20 to 25 minutes, until toothpick inserted into center comes out clean.
