This Blueberry Oatmeal adds the sweetness of blueberries to wholesome oats for a yummy and healthy breakfast.
Hanky Pank starts almost every morning with Apple & Cinnamon Oatmeal. It’s been amazing because it’s one less meal to plan each week. I just make and freeze some oatmeal on Saturday or Sunday and then breakfast is ready all week. So the other day I went to make a pot (vat) of oatmeal and realized we were out of apples. Hmmm…
Blueberries to rescue! Luckily, in addition to apples, we almost always have frozen blueberries. This oatmeal is not only delicious, but it’s also a fun shade of purple. I also added in a little bit of flaxseed meal for some healthy fats and nutmeg to spice it up!

Store in 3 days in refrigerator or 3 months in freezer.
Ingredients
- 1 cup steel-cut oatmeal
- 1 cup blueberries
- 1/2 teaspoon flaxseed meal
- 1/2 teaspoon nutmeg, optional
Instructions
- Bring 3 cups of water to a boil in a medium pot.
- Add oatmeal, blueberries, flax seed, and nutmeg. Reduce heat and simmer until tender, about 10 to 15 minutes.
- If needed, add 1/4 cup water to oatmeal if it becomes dry or begins sticking to the bottom of the pan.
