Green Bean & Potato Puree
This Green Bean & Potato Puree combines a handful of bright green beans with a small potato for a creamy, nutrient-packed puree.
Hanky Pank always surprises when it comes to foods. When I starting making my own baby food, I started with the tired and true vegetable purees, such as Beet Puree and Sweet Potato Puree, before realizing I’d been forgetting all sorts of green vegetables. I whole-heartedly believe that Hanky Pank should have a chance to taste every food. But I seemed to have put green vegetables on the back burner because subconsciously I didn’t think he’d like them.
I could not have been more wrong. Hanky Pank loves his green vegetables. But the most shocking moment was when Hanky Pank grabbed a piece of asparagus off my plate and just chowed down. Both my husband and I were in complete disbelief!

While it can be a bit difficult to make green beans into a smooth puree, adding a small potato helps to make a smooth and creamy puree. Similar to Pea Puree, the green beans should remain bright green while steaming. If the color starts to dull, they’re starting to overcook. Just remove from heat and run under cold water to stop the cooking process. Then throw the green beans and potato into a blender or food processor and hit puree for vibrant green baby food.

Store for 3 days in refrigerator or 3 months in freezer.

Ingredients
- 1/2 pound green beans, trimmed
- 1 small potato (white or red), cubed
Instructions
- Bring 2 cups of water to a boil in a medium pot with a steamer. Add potatoes and steam for 12 minutes.
- Add greens beans and steam until tender, about 8 minutes.
- Transfer vegetables to food processor or blender using a slotted spoon.
- Puree vegetables until smooth. If needed, add cooking water to reach desired consistency.
